Ingredients
- 16 ounces chourico Hot Portuguese Sausage
- 4 cups rice cooked
- 16 ounces whipped cream cheese
- 2 tablespoons cumin divided
- 1 cup onion diced (about 1/2 a large vadalia)
- 1 cup red bell pepper diced (about 1 medium red pepper)
- 1 cup corn frozen
- 1 clove garlic minced

Instructions
- Preheat oven to 350 degrees.
- While the rice is hot, mix in the cream cheese and 1 1/2 tablespoons of cumin.
- Slice the chourico. Cook in a frying pan over medium until browned and cooked through. Add to rice mixture.
- In same pan, add the onion, pepper, corn, garlic, and remaining 1/2 tablespoon of cumin. Cook until vegetables are softened. Add to rice mixture.
- Put the mixture in a 9x13 baking dish. Add more cumin to taste.
- Cook 15 - 25 minutes until warmed through and bubbly.
