Ingredients
- 1 lb ground beef
- 1 cup onion diced
- 1 cup carrots diced
- 1 cup celery diced
- 1 cup red bell pepper diced
- 1 whole jalapeno pepper
- 3 cloves garlic minced
- 1 14 oz can kidney beans
- 1 14 oz can adzuki beans
- 1 28 oz can diced tomatoes
- 1 cup corn frozen
- 2 Tbsp chili powder
- 2 Tbsp cumin
- 1 Tbsp oregano
- 1 Tbsp corriander
- 1 tsp salt
- 1 Tbsp olive oil
- 1 cup water

Instructions
- Brown the ground beef and set aside.
- Sauté onions, carrots, celery, peppers, and garlic in a large soup pot for about 5 minutes.
- Add diced tomatoes. Do not drain.
- Drain the kidney and adzuki beans and add to pot.
- Add the ground beef, corn and spices.
- Add 1 cup water. Use more or less to get to the consistency you like.
- Simmer for 30 minutes.
